Ingredients

  1. 500g lean mince
  2. 1 packet King Corn and Bacon Soup Mix
  3. 4 ½ cups hot water
  4. ½ teaspoon chilli flakes
  5. 8 tortillas
  6. Grated cheese
  7. Sour cream
  8. Chopped spring onion

Method

  1. Break the mince up and brown in a hot frying pan.
  2. Add the soup mix and stir in the water and chilli flakes.
  3. Cover and bring to the boil. Reduce the temperature and simmer for 1 hour.
  4. Place a tortilla on a board.
  5. Spoon about half a cup of mince mixture along the edge of the tortilla. Roll up to enclose the filling.
  6. Place in a greased baking dish, scattering cheese between layers of tortillas.
  7. Sprinkle the top layer with cheese.
  8. Bake at 180 degrees C for 20 minutes or until golden and hot, grilling for a few minutes if necessary to brown.
  9. Served topped with sour cream and garnished with spring onion greens.
